Type of Pizza Crusts
1. Classic Pizza Crust
Prep time: 1 hour || Cook time: 20 minutes || Serving: two 8" thick-crusts or 9" thin-crusts.
Ingredients
- 1 cup (250 ml) warm water
- 1 teaspoon (5 ml) instant yeast
- 1 teaspoon (5 ml) sugar (honey, maple, sugar cane etc.)
- 2 cups (300 g) all-purpose flour
- 1 teaspoon (5 ml) salt
Instructions
- In a large bowl, combine the water, yeast and sugar. Let stand until the mixture foams on top, about 5 minutes.
- In a food processor work with the plastic blade or the dough hook. Combine the flour and salt. Increase the speed to medium and add the yeast mixture until a soft ball forms.
- If you don’t have a food processor, make a well in the flour and salt and pour the liquids in the centre. Work with your fingers gradually adding dry ingredients to the liquids.
- Remove the dough from the bowl and knead for a few minutes on a floured surface to prevent sticking.
- Place in a lightly oiled bowl and cover with a clean cloth. Let the dough rise for about 30 minutes. Cut the dough in half.
- Use the pizza dough immediately or refrigerate it (less than 48 hours), or place it in an airtight bag and freeze.
- Preheat your oven to 450°F.
- On a lightly floured work surface, roll out one piece of dough into an 8 inch disc.
- Bake at 450°F for 10 minutes until it partially cooked.
- Add the pizza sauce and your choice of toppings.
- Bake for 10 minutes or until the dough is cooked through and nicely golden.
2. Easy Basic Bread Machine Pizza Crust
Prep time: 2h15 minutes || cook time: 20 minutes || Serving: two 12" pizzas
Ingredients
- 4 teaspoons dried granulated yeast
- 6 cups all purpose flour
- 2 teaspoons salt
- 4 tablespoons sugars (e.g. cane sugar)
- 4 tablespoons olive oil
- 2 cups water, plus
- 4 tablespoons water
Instructions
- Place all the above ingredients in the order I have listed into the bread machine.
- Select the dough cycle and press start.
- When the dough cycle is complete, take the dough out of the machine and place in well greased bowl, and roll the dough around (in the bowl) thus 'coating' it in oil.
- Cover and leave to rise in a warm place for about 1/2 an hour.
- Knead the risen dough lightly.
- Separate the dough in half (to make two pizzas) and roll the dough into a circle.
- Place on well greased baking tray or pizza pan.
- Bake at 450°F for 10 minutes until it partially cooked.
- Add your pizza sauce and choices of toppings.
- Bake at 450°F for 10 minutes or until the dough is cooked through and nicely golden.
2. Sourdough Pizza Crust

Ingredients
Note: This list is for regular-crust thickness. For thin-crusts divide the recipe in half and at step 8, bake it for 5 min.
- 2 cup sourdough discard
- 1 cup warm water
- 5 cups All-Purpose Flour
- 2 teaspoons salt
- 1 teaspoon instant or active dry yeast
Instructions
- Stir any liquid on top of your refrigerated starter back into it before measuring 1 cup into a large mixing bowl.
- Add the warm water, flour, salt, yeast. Mix to combine, then knead for about 7 minutes in a mixer with the dough hook, until the dough wraps itself around the hook and cleans the side of the bowl.
- Place the dough in a greased container, cover and let rise until almost doubled in bulk. Depending on the vitality of your starter, this will take between 2 and 4 hours. For a faster rise, place the dough in a warm spot, or double the yeast.
- Divide the dough in half, and shape each into a flattened disk. Drizzle two 12" round pizza pans with olive oil, and brush to coat the bottom. Place the dough in the pans, cover, and let rest for 15 minutes. After this rest, gently press the dough toward the edges of the pans. If it starts to shrink back, cover and let rest for 15 minutes before continuing.
- Cover the pan and let the dough rise until it's as thick as you like.
- Towards the end of the rise time, preheat your oven to 450°F.
- Bake the crust until it become partially cooked (about 10 minutes).
- Add the pizza sauce and choice of toppings.
- Bake until the cheese has melted (about 5 to 7 min.).
3. Authentic Paleo Pizza Crust

Ingredients
- 1/3 cup (2 2/3 fluid ounces) warm water
- 3 tablespoons (42 g) extra virgin olive oil, plus more for brushing
- 1 tablespoon (21 g) honey
- 2 1/4 teaspoons active dry yeast (or 1 3/4 teaspoons instant yeast)
- 1 egg at room temperature, beaten
- 1/2 teaspoon kosher salt, plus a pinch for sprinkling
- 1 1/2 cups and 1/4 cup tapioca flour, divided, plus more for dusting
- 1 cup (120 g) almond flour, plus more as needed
Instructions
- In a large bowl:
- Combine the water, olive oil, and honey and whisk to combine well. Sprinkle the yeast on top and let it sit for about 5 minutes, until foamy.
- Whisk in the egg. Add the salt and 1 1/2 cups of tapioca flour and whisk until a smooth, sticky batter forms.
- Stir in the almond flour, and then stir in the remaining tapioca flour. The dough should appear shaggy.
- Dust your hands with a little tapioca flour and put the dough into a ball, kneading it a bit to get any floury bits mixed in.
- If it’s too sticky to come together, add additional almond flour a tablespoon at a time.
- Return the ball of dough to the bowl, cover it with plastic wrap, and set it in a warm place for 45 minutes.
- Preheat the oven to 375°F and get the baking sheet ready.
- On a lightly floured work surface, roll out one piece of dough into an 9 inch disc. Brush the top of the dough with a little bit of olive oil and sprinkle with salt.
- if you want puffy rim of crust: push out the dough toward the edges.
- Bake for 8 minutes. Remove the dough from the oven, prick the middle of the dough in several places with a fork.
- Add the pizza sauce and your choices of toppings.
- Bakes until ready (about 5 minutes). Set the oven to broil and broil the pizza for up to two minutes until browned to your liking.
4. Bell Pepper Pizza Crust

Ingredients
- 2 green bell peppers
- 1/2 cup homemade pizza sauce
- toppings, uncooked (meat toppings have to be already cook)
Instructions
- Preheat your oven to 400 F.
- Slice each bell pepper into 4 equal slices, carefully removing the seeds.
- Top each pepper quarter with pizza sauce and your choice of toppings.
- Place the pizza on a baking sheet, and place in the oven.
- Bake for 12 to 15 minutes. Stick them under the broiler and broil on high for 3 to 4 more minutes.

Ingredients
- 1 eggplants, unpeeled, slice crosswise or lengthwise into 1/4-inch-thick
- 1/2 cup homemade pizza sauce

- Three ways to prepared eggplant pizza crust
- Grilled:
- Grill the eggplant slices until it softens, but still has some firmness to it (about 10-15 minutes).
- Add pizza sauce and choice of toppings.
- Grilled eggplant pizzas until ready.
- Roasted:
- Preheat the oven to 450F.
- Line a large baking sheet with foil and spray it with olive oil cooking spray.
- Place the eggplant slices on the prepared baking sheet. Spray them with olive oil spray. Sprinkle with kosher salt, black pepper and garlic powder.
- Bake the eggplant slices for 10 minutes. Remove from the oven, turn them over, spray with more olive oil and bake 10 more minutes.
- Remove the pan from the oven. Put the oven to broil on high.
- Add the pizza sauce and your choice of toppings.
- Return the pan to the oven. Broil until ready (about 2-3 minutes, until cheese is melted).
- Baked:
- Brine the eggplant slices(to draw out the bitterness and keep the shape of the eggplant)
- Fill a large bowl with 1 tablespoon salt and about 1/2 cup hot water. Stir until salt dissolves completely.
- Fill the bowl with about 2 quarts cold water. The water should taste salty.
- Completly submerge the eggplants in the salted water for at least 30 minutes up to 1 hour.
- Drain the eggplants and pat it dry.
- Preheat the oven to 400°F.
- Brush or rub a little olive oil on each side of the eggplant slices and place on a baking sheet lined with parchment paper. Sprinkle with salt and pepper.
- Place in oven for 7-10 minutes.
- Remove the eggplant slices from the oven, add pizza sauce and choice of toppings.
- Place in the oven until the cheese has melted (for about 5 minutes).

6. Cheese Pizza Crust
Prep time: 5 minutes || Cook time: 15 minutes || Serving: 9" pizza
Ingredients
- 2 cups (~8 oz.) mozzarella cheese
- 3/4 cup almond flour
- 1 tablespoon psyllium husk powder
- 3 tablespoons (~1.5 oz.) cream cheese
- 1 large egg
- 1 tablespoon Italian seasoning
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon olive oil (to work with the dough)
Instructions
- Preheat oven to 400F.
- Add mozzarella cheese in a microwave safe bowl.
- Microwave the cheese until fully melted and pliable about 90 seconds.
- Try not to have browning (or very lightly) since browned cheese will go hard.
- Add in the cream cheese and egg to the cheese mixture. Mix in well.
- Mix in the almond flour, psyllium husk powder, Italian seasoning, salt and pepper to the cheese mixture.
- As you mix the dough, it should become cool enough to work with your hands. Knead the dough together until you can form a round ball.
- Plop the ball onto a silicon baking sheet with olive oil to keep it easy to work with. Press the dough out with your hands, forming a circular pattern as you press outward.
- Bake the pizza crust on an upside down cookie sheet for 10 minutes – this allows for the pizza to spread out slightly without being constricted by the edges of the cookie sheet.
- Flip the pizza crust to the other side and bake for another 2-4 minutes.
- Once the crust is baked, remove it from the oven. Add toppings of your choice.
- Return to the oven and cook until done (about 10 minutes).
7. Buffalo Chicken Pizza Crust
Prep time: 15 minutes || Cook time: 10 minutes || Serving: two 12" pizzas
Ingredients
- 1 pound boneless and skinless chicken thighs (or ground meat of choice)
- 1 cup shredded whole milk mozzarella
- 1 large egg
- 1 teaspoon dried oregano
- 1/4 teaspoon black pepper
- 1/4 teaspoon salt
Instructions
- Preheat oven to 400°F.
- Grind up the chicken thighs a food processor. Transfer to a large mixing bowl.
- Add shredded mozzarella, egg, oregano, pepper, and salt to the mixing bowl.
- Mix the chicken crust together until all of the shredded cheese is tucked inside the "dough."
- Spray oil on a lined baking sheet, and spread the chicken out with the back of a spoon , until it's about 1/4 of an inch thick.
- Bake for 25 minutes, or until the crust is cooked through and starting to brown on top.
- Once the crust is baked, remove it from the oven. Add the pizza sauce and the choice of toppings.
- Cook for another 10 minutes, until the cheese is melted and starts to brown.
