Stove-top Oatmeal

Based Ingredients

optional additions of your choice for your oatmeal - dried fruits (apricots, raisins, cranberries, etc.) - fruits (apples, pears, berries, bananas, kiwi, oranges etc.) - nuts (almond slices, walnuts, shredded coconut, peanuts etc.) - sweeteners (honey or maple syrup) - dash cinnamon - vanilla extract

1. Fruit Oatmeal

  1. In a large saucepan, bring the milk (and any dry fruit, if using) to a gentle simmer over medium heat.
  2. Add the oats, mix, and allow the mixture to come to a boil (be careful, as this will boil over very easily).
  3. Add hard fruits like apples.
  4. Reduce heat to low, and allow to simmer, with frequent mixing, for about 5 minutes, or until the oatmeal reaches the desired consistency.
  5. Serve with chopped fresh fruit.

2. Peanut Butter and Banana

  1. Add oats, banana slices, milk, cinnamon and salt to a pot and stir to combine. Heat over medium-high heat until the oatmeal is to your desired consistency (about 8-10 minutes).
    • Be sure to stir the oats several times while cooking to make sure the banana slices melt into the oats.
  2. Portion oats into two bowls and serve with peanut butter, and banana slices. Add a splash of milk and/or maple syrup on top before serving, if desired.

3. Peanut Butter and Jam

  1. Add oats, milk, and salt to a pot and stir to combine. Heat over medium-high heat until the oatmeal is to your desired consistency (about 8-10 minutes).
  2. Add peanut butter, jam and vanilla until combined.
  3. Divide into bowls and serve with more milk and top with a drizzle of peanut butter, jam, freeze-dried berries and chopped peanuts before serving, if desired.

4. Apple Cinnamon

Add the apples and cinnamon into the Instant Pot along with the oats and liquid. Secure the lid and close the vent.
Press the MANUAL (or PRESSURE COOKER for newer Instant Pot models) button and set to 4 minutes.
After the oats finish cooking, allow the pressure to release naturally (about 10-15 minutes).
After the pressure releases, open the lid and give the oatmeal a good stir. Any extra liquid will absorb as it cools. Stir in the maple syrup.
Divide into bowls and top each with more chopped apples and a drizzle of almond butter, date caramel and milk, if desired.

5. Blueberry Peach

  1. Add oatmeal, milk, 1/2 cup peaches, 1/4 cup blueberries, vanilla and cinnamon into a small saucepan.
  2. Cook over medium heat until the oatmeal is to your desired consistency (about 5-10 minutes).
  3. Spoon into a serving bowl. Top with remaining peaches, blueberries, and nut butter.

6. Salted Caramel

  1. Place oats, milk, banana slices and salt into a saucepan and bring to a boil, reduce heat to a simmer and cook stirring frequently until the oatmeal is to your desired consistency (about 5-7 minutes).
  2. Portion oatmeal into a bowl, drizzle date caramel sauce on top of oats and stir.

7. Pumpkin

 Add the pumpkin pie spice and cinnamon into the Instant Pot along with the oats and liquid. Secure the lid and close the vent.
Press the MANUAL (or PRESSURE COOKER for newer Instant Pot models) button and set to 4 minutes.
After the oats finish cooking, allow the pressure to release naturally (about 10-15 minutes).
After the pressure releases, open the lid and give the oatmeal a good stir. Any extra liquid will absorb as it cools. Stir in the sweetener and pumpkin puree.
Divide into bowls and top each with more pumpkin seeds, cranberries and milk, if desired.

Overnight Oatmeal

Ingredients

  1. Mash the banana in a large bowl.
  2. Add the other ingredients, and mix well (add any dry fruit, if using, at this point).
  3. Cover, and refrigerate overnight.
  4. Serve the oatmeal with chopped fresh fruit.
