  1. Preheat oven to 350F. Grease and flour two 8 x 4 inch pans.
  2. Sift flour, salt, baking powder, soda, and cinnamon together in a bowl.
  3. Beat eggs, oil, vanilla, and sugar together in a large bowl.
  4. Add sifted ingredients to the creamed mixture, and beat well.
  5. Stir in zucchini and nuts until well combined.
  6. Pour batter into prepared pans.
  7. Bake for 40 to 60 minutes, or until tester inserted in the center comes out clean.
  8. Remove from oven and let cool in the pan for a few minutes. Then remove the loaves from the pan and let cool completely before serving.
