Dairy-Free Butter Chicken

  1. Add oil to a large skillet and cook onion and garlic until soft and fragrant, about 5 minutes.
  2. Add fresh ginger, turmeric, garam masala, cumin, chili powder, salt, pepper, cinnamon and cayenne and toss to combine. Cook for another 1-2 minutes.
  3. Add chicken, coconut milk, tomato sauce, lemon juice and mix well. Cover over medium-high heat and let it cook for about 15 minutes or until the chicken is cooked through.

Notes

Serve over coconut rice, cauliflower rice, quinoa or barley with fresh cilantro and a wedge of lemon for squeezing.
