  1. Dice all the vegetables and cut the meat in 1 inch cubes. Set aside.
  2. For rice:

    If using cauliflower: Add the cauliflower head in the food processor with the shredding attachment to rice the cauliflower.

    If using brown/white rice: Cook 1 cup rice with 1 1/2 cup of broth or as per rice's instruction until ready.

  3. Cook the Jambalaya:

Over the stove:

  1. Heat a large pot over medium-high heat with olive oil.
  2. Cook the onions until translucent.
  3. Add mushrooms and cook for 2-3 minutes.
  4. Add bell peppers and cook until it become softer, about 3-5 minutes.
  5. Add garlic and cook for 30 second.
  6. Add rice, broth, and meat. Mix together. Cover and let cook for about 5 minutes.
  7. Add tomatoes, tomato paste, and spices. Stir to incorporate.
  8. Cover and let cook until cauliflower is tender and meats are cooked through (about 5-8 minutes).

Instant pot:

  1. Heat the olive oil in the pot.
  2. Cook the onions until translucent.
  3. Add mushrooms and cook for 2-3 minutes.
  4. Add bell peppers and cook until it become softer, about 3-5 minutes.
  5. Add garlic and cook for 30 second.
  6. Add rice, broth, meat, tomatoes, tomato paste, and spices. Mix Together.
  7. Close the lid and put the setting to Manual for 5 minutes.
