Jambalaya

Ingredients
- 2 sausage, sliced
- 2 chicken breasts, 1 inch cubed
- 12 shrimps (optional)
- 2 garlic cloves, minced
- 1 yellow onion, diced
- 2 green bell peppers, chopped, 1 inch
- 10-12 mushrooms, chopped (optional)
- 1 head cauliflower, riced (or 1 cup of white or brown rice)
- 1 (6oz) can tomato paste
- 1 (14oz) can diced tomatoes, undrained
- 1 cup chicken broth
- 2 tablespoon olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- 1/2 teaspoon dried thyme
- 1/2 teaspoon dried parsley
- 1/2 teaspoon cayenne pepper
- salt and pepper, to taste
Instructions
- Dice all the vegetables and cut the meat in 1 inch cubes. Set aside.

For rice:
If using cauliflower: Add the cauliflower head in the food processor with the shredding attachment to rice the cauliflower.
If using brown/white rice: Cook 1 cup rice with 1 1/2 cup of broth or as per rice's instruction until ready.

Cook the Jambalaya:
Over the stove:
- Heat a large pot over medium-high heat with olive oil.
- Cook the onions until translucent.
- Add mushrooms and cook for 2-3 minutes.
- Add bell peppers and cook until it become softer, about 3-5 minutes.
- Add garlic and cook for 30 second.
- Add rice, broth, and meat. Mix together. Cover and let cook for about 5 minutes.
- Add tomatoes, tomato paste, and spices. Stir to incorporate.
- Cover and let cook until cauliflower is tender and meats are cooked through (about 5-8 minutes).
Instant pot:
- Heat the olive oil in the pot.
- Cook the onions until translucent.
- Add mushrooms and cook for 2-3 minutes.
- Add bell peppers and cook until it become softer, about 3-5 minutes.
- Add garlic and cook for 30 second.
- Add rice, broth, meat, tomatoes, tomato paste, and spices. Mix Together.
- Close the lid and put the setting to Manual for 5 minutes.
