Loaded Cauliflower Bake Casserole

Ingredients
- 1 large cauliflower, cut into florets
- 2 chicken breasts (100g), cubed
- about 500g bacon slices
- 1/2 sweet onion, diced
- 3 cloves garlic minced
- 3 tablespoons olive oil
- 2 cups almond milk
- 3 tablespoons arrowroot flour
- 2/3 cup mayonnaise
- Spice mixture:
- 1 tablespoon chopped parsley
- 1 tablespoon thyme
- 1 teaspoon cayenne pepper (optional for spiciness)
- salt, black pepper to taste
Instructions
- Preheat oven to 350°F.
- Baked the bacon in the oven. Crumbled them and set aside.
- Baked the chicken cubes. Shredded them and set aside.
- Blanch cauliflower in a large pot of boiling water for 2 minutes.
- Drain well and set aside.
- To make the sauce:
- In a skillet heat the olive oil over medium heat.
- Add the onions and cook until translucent.
- Add garlic and cook for 30 seconds.
- Add the arrowroot flour and stir until golden.
- Add the milk and bring to a low simmer, stirring until combined.
- Stir in the mayonnaise and season with the spice mixture.
- Adjust the spice mixture to taste.
- Add drained cauliflower and bacon crumbles. Toss to combine.
- Transfer the mixture into a casserole dish.
- Bake for 30 to 45 minutes or until the top is golden brown.
