Loaded Cauliflower Bake Casserole

  1. Preheat oven to 350°F.
    • Baked the bacon in the oven. Crumbled them and set aside.
    • Baked the chicken cubes. Shredded them and set aside.
  2. Blanch cauliflower in a large pot of boiling water for 2 minutes.
  3. Drain well and set aside.
  4. To make the sauce:
    1. In a skillet heat the olive oil over medium heat.
    2. Add the onions and cook until translucent.
    3. Add garlic and cook for 30 seconds.
    4. Add the arrowroot flour and stir until golden.
    5. Add the milk and bring to a low simmer, stirring until combined.
    6. Stir in the mayonnaise and season with the spice mixture.
    7. Adjust the spice mixture to taste.
  5. Add drained cauliflower and bacon crumbles. Toss to combine.
  6. Transfer the mixture into a casserole dish.
  7. Bake for 30 to 45 minutes or until the top is golden brown.
