Sausage Casserole

Ingredients
- 1 tbsp olive oil
- 400g homemade sausages, ground or cut in slices.
- 1 sweet onion, diced
- 2 cloves garlic, minced
- 1/2 butternut squash, peeled, deseeded and diced or use 500g frozen, chopped butternut squash
- 2 large sweet or white potatoes, peeled and diced
- 2 apples, peeled and diced
- 500 ml bone broth
- Spices mixture (oregano, basil, parsley, salt, pepper), to taste
Instructions
- Heat the oil in a large casserole dish or saucepan over a medium heat. Add the sausages and cook for 5-10 minutes, turning regularly, until browned.
- Remove the sausages from the pan, and set aside.
- Add the onion and cook until translucent.
- Add garlic and cook for 30 seconds.
- Add the butternut squash, potato and apples and cook for 10 minutes, stirring regularly.
- Return the sausages to the pan and add the stock and spice mixture.
- Bring to the boil, reduce the heat and simmer for around 30 minutes or until the vegetables are cooked.
- Adjust the spices mixture to taste.
Serve warm!
