Sausage Casserole

  1. Heat the oil in a large casserole dish or saucepan over a medium heat. Add the sausages and cook for 5-10 minutes, turning regularly, until browned.
  2. Remove the sausages from the pan, and set aside.
  3. Add the onion and cook until translucent.
  4. Add garlic and cook for 30 seconds.
  5. Add the butternut squash, potato and apples and cook for 10 minutes, stirring regularly.
  6. Return the sausages to the pan and add the stock and spice mixture.
  7. Bring to the boil, reduce the heat and simmer for around 30 minutes or until the vegetables are cooked.
  8. Adjust the spices mixture to taste.

Serve warm!
