  1. Place the potatoes, carrots, bay leaf and onions in a pot and cover with water to level. Season with salt and mix.
  2. Bring to a boil and cook, covered, over medium heat for 25 minutes.
  3. Drain, remove the bay leaf and add all the rest into a large bowl.
  4. Using a potato masher, coarsely mash all of the mixture.
  5. Add the butter, milk, nutmeg and pepper. Mix.
  6. Adjust the seasoning if necessary and serve.

The hutspot is a mixture, which is mashed but should be coarse and not reduced to a smooth purée. Served and enjoyed as is or with gravy, or accompanying with a cut of beef, smoked bacon or smoked sausage.
