1. Carrot Glaze

Ingredients
- 1/2 Onion, diced
- 3 Carrots, chopped (in cubes or lengthwise)
- 1/2 to 1 cup Broth
- Honey
- 1 teaspoon Cornstarch
- Salt
- Basil
Instructions
- Pre-heat the oven at 375F.
- Heat the olive oil in a saucepan over medium-high heat. When warm, fry the onions until translucent.
- Add the cornstarch and mix in the saucepan.
- Add broth until you obtain the right consistency, a glaze should be sticky and thick, not runny.
- Add honey to taste.
- Add the carrots and mix in the sauce well.
- Put the carrots on a baking sheet and roast for about 20 minutes, or until cooked.
2. Citrus Carrot with Dill

Ingredients
- 3 Carrots, chopped (in cubes or lengthwise)
- Lemon juice, to taste
- 1/4 cup fresh dill, diced
- Salt and pepper
Instructions
- In a bowl, add in the carrots, dill, lemon juice, salt and pepper. Mix well.
- Put the carrots on a baking sheet and roast for about 20 minutes, or until cooked.
