Cream of Broccoli Soup

  1. Over medium-high heat, heat olive oil. When hot, fry the onion before transluent (about 2 minutes). Add the carrots, bell pepper and celery and cook for a few minutes. Add broccoli, and cook for a few minutes. Add garlic and fry for 30 second.
  2. Add broth until the vegetables are barely covered. Bring to a boil then reduce heat to low heat and let it simmer for 20 min.
  3. Pour the soup into a mixer and blend it.
  4. Add in cream and mix it.
  5. Pour the soup back into the pot and add your choice of herbs, salt and pepper. Adjust to taste.

Serve Warm.
