Cream of Broccoli Soup

Ingredients
- 4-8 cups of broth
- 1 head of broccoli and its stem (remove bark), chopped
- 1 onion, chopped
- 2 cloves of garlic, minced
- about 1 stalk of celery, chopped
- about 1 carrot, chopped
- about 1/2 bell pepper, chopped
- a few glugs 35% cream
- substitute for unsweetened coconut milk
- dry parsley and basil or parsley and sage
- salt and pepper
Instructions
- Over medium-high heat, heat olive oil. When hot, fry the onion before transluent (about 2 minutes). Add the carrots, bell pepper and celery and cook for a few minutes. Add broccoli, and cook for a few minutes. Add garlic and fry for 30 second.
- Add broth until the vegetables are barely covered. Bring to a boil then reduce heat to low heat and let it simmer for 20 min.
- Pour the soup into a mixer and blend it.
- Add in cream and mix it.
- Pour the soup back into the pot and add your choice of herbs, salt and pepper. Adjust to taste.
Serve Warm.
